I hate, hate, hate this ‘blackened Cajun’ stuff. There’s not a thing Cajun about it – it’s an invention of Paul Prudhomme’s and, while notable, has not one thing to do with traditional South Louisiana cookery.
But it is tasty, whatever it should be called.
