    I’m trying to remember, Gary. I think it was your basic roux (2-3 tbsp butter/ 2-3 tbsp flour) then 2 cups hvy cream then schmaybe 1 cup each of diced grannie smith and gorgonzola, stir over lowish heat to melt the cheese then dump over a pound of pasta, mix and put in a baking dish, spingle with some more gorg (why not) and parm/peccorini and bake at 350 for 20-30 minutes or so. I made this a few months (and many many bottles) ago and thought of it this morning (hence the “i might have to make this tomorrow” line) so I don’t remember the specifics…I do remember thinking that it needed a tad more gorgonzola, so I think I’ve bumped it up in the pseudo recipe above.

    *edited to reduce hvy cream to 2 cups; i think 3 is was too much.
    damn, i have to write things down one of these days.

    Not a blue cheese fan, I’m afraid, but the pictures look great. I have a shepherd’s pie in the oven right now (my own version of comfort food) but did not think to take pictures. I have to start taking pix.
